This Healthy Texan Week, weve put together a daily recipe for May 511. Try a recipe each day to make healthy eating fun, affordable, and simple for the whole family!
May 5泭 Veggie Street Tacos with Fresh Salsa
Celebrate Cinco de Mayo with these colorful and crunchy veggie tacos!
Ingredients:
泭泭泭泭 Corn tortillas
泭泭泭泭 1 bell pepper, sliced
泭泭泭泭 1 zucchini, diced
泭泭泭泭 1/2 onion, sliced
泭泭泭泭 1 tomato, chopped
泭泭泭泭 Juice of 1 lime
泭泭泭泭 Olive oil or spray for pan
泭泭泭泭 Salt and pepper to taste
Instructions:
1.泭泭泭 In a bowl, mix the bell pepper, zucchini, and onion. Add a little salt and pepper.
2.泭泭泭 Heat a skillet over medium heat and lightly coat with oil.
3.泭泭泭 Add the veggies to the pan and cook for 57 minutes, until tender.
4.泭泭泭 While veggies are cooking, warm your tortillas in another pan or in the microwave.
5.泭泭泭 Once the veggies are ready, spoon them into the warm tortillas.

泭泭泭泭 1/2 cup mushrooms, chopped
泭泭泭泭 Olive oil or spray for pan
Instructions:
1.泭泭泭 Heat a skillet over medium heat and lightly coat with oil.
2.泭泭泭 Place one tortilla in the pan.
3.泭泭泭 Sprinkle cheese, spinach (or kale), and mushrooms evenly on top.
4.泭泭泭 Place the second tortilla on top to make a sandwich.
5.泭泭泭 Cook for 23 minutes per side, or until the cheese melts and the tortilla is golden brown.
6.泭泭泭 Remove from heat, let cool slightly, and cut into triangles.

Swap the candy for something naturally sweet!
Ingredients:
泭泭泭泭 1 lb fresh strawberries
泭泭泭泭 Pinch of salt
Instructions:
1.泭泭泭 Preheat oven to 200簞F.
2.泭泭泭 Wash the strawberries and remove the leafy tops.
3.泭泭泭 Cut strawberries in half.
4.泭泭泭 Place the strawberries cut-side up on a baking tray. Leave space between them.
5.泭泭泭 Sprinkle with a small pinch of salt.
6.泭泭泭 Lower oven to Keep Warm setting if your oven has it.
7.泭泭泭 Place the tray in the oven. Bake for 3 hours total.
8.泭泭泭 After 1.5 hours, flip the strawberries over.
9.泭泭泭 Every 30 minutes, open the oven door for a few seconds to let heat and moisture out.
10.泭 泭After 3 hours, remove strawberries and let them cool on a wire rack.
Tip: Cook them low and slowdont rush or overcrowd the tray. This helps them dry out instead of getting sticky or burnt. Opening the oven a little every half hour helps them dry evenly.
